Arroz Caldo

  • 1 medium size chicken, cut into serving pieces
  • 1/2 tsp ground pepper
  • 3 cloves garlic, minced
  • 2 cups sweet rice, washed
  • 2 tbsps. ginger, cut into thin stripes
  • 6 cups water
  • 1 medium size onion, diced
  • Salt to taste
  • 3 tbsps vegetable oil
  • 1/3 cup green onions, chopped
 

Saute garlic until brown, add ginger and onion. When the onion is cooked, add the chicken and saute for about 5 minutes. Add the rice and water. Cover and simmer until the rice and the chicken are thoroughly cooked. Season with pepper and salt as desired. Serve with chopped green onions on top.
