Leche Flan
|
- 1/2 cup supgar
- 4 whole eggs, slightly beaten
- 300 ml Milkmaid full cream (sweetened condensed milk)
- 1 cup water
- 1 tsp lemon flavouring or lemon rind

Caramelize sugar in a metal form. Set aside. Combine all ingredients in a bowl. Pour into
prepared form over a strainer. Cover with foil and cook in a pressure cooker on a
tripod over an inch deep of water for 10 minutes (or 20 minutes in a steamer). Start timing when
the pressure cooker regulator starts ”dancing” or when water boils in a steamer.
For a special creamy leche flan use only the egg yolk but double the quantity.
