Banana Nut Cake

  • 2 cups flower
  • 2 cups mashed banana
  • 1 cup sugar
  • 1/2 cup margarine
  • 2 whole eggs
  • 1/4 cup ground peanuts
  • 2 – 3 tbs baking powder
  • 3/4 cup evaporated milk
  • 1 – 2 tbs vanilla or lemon
 

Cream margarine and sugar in a bowl. Add egg and mix well. Add sifted flour with baking powder alternately with milk and mashed banana. Blend well. Add the peanuts and continue mixing. Place in a cake pan lined with wax paper or oil. Bake in a moderate temperature until done.
